Description

Job Purpose or Objective(s) : Choctaw Casino & Resort is hiring a pre-opening Chef de Cuisine, for our Sports Lounge; The League. This includes selection, development and performance of leaders and team members. This position is also responsible for food production, and ensuring all costs are minimized, as well with the daily operations of the dining entity to ensure the highest level of food quality and guest satisfaction. The League is Choctaw Casino & Resort – Durant Location brand new Sports Lounge projected to open in July 2020. The League will emphasis on casual dining, and large draft beer selection to the Southern Oklahoma Region.

Primary Tasks:

  1. Cook meals based on established recipes or customer requests and ensures meal quality and guest satisfaction.

  2. Oversee fine dining food preparations and expediting of all food that go out to the guests.

  3. Coordinate daily specials showcasing culinary skills and meal preparations for all the fine dining venue VIP events.

  4. Oversee Salt & Stone | Room Service operation.

  5. Develop balanced menus focused on a higher quality fine dining cuisine.

  6. Develop and train fine dining culinary team.

  7. Coordinate and establish, with the sommelier, food and wine pairings.

  8. Manage kitchen operations including organization of workloads, overseeing the preparation of food, managing inventory levels, and maintaining the cleanliness of the kitchen.

  9. Oversee the training and development of all Sous Chefs, Culinary Leads, and Culinary team members.

  10. Manage quality, cost, waste, and distribution of all foods and other expenses for assigned operation.

  11. Monitor work to ensure ServSafe guidelines are being followed.

  12. Perform other duties as may be assigned.

Required Education, Skills and Experience:

MINIMUM

  • Formal training at an accredited culinary institute or equivalent experience

  • ServSafe Certification

  • Ability to handle multiple tasks and deploy available resources effectively

  • Ability to efficiently and accurately analyze current performance trends and identify leading indicators for future trends

  • Ability to enhance profitability, sustainability and creativity across all channels in alignment with business strategy

  • Good interpersonal, customer skills

  • Possess excellent communication skills both written and verbal, with the ability to communicate on various levels to include management, departmental, customer and associate levels

  • Five (5) years’ experience as a Fine Dining Chef in a high-volume Casino/Resort, Hotel or major restaurant chain

TARGET

  • Degree in Culinary Arts from a recognized Culinary school

  • ServSafe Certification

  • Ability to handle multiple tasks and deploy available resources effectively

  • Ability to efficiently and accurately analyze current performance trends and identify leading indicators for future trends

  • Ability to enhance profitability, sustainability and creativity across all channels in alignment with business strategy

  • Good interpersonal, customer skills

  • Possess excellent communication skills both written and verbal, with the ability to communicate on various levels to include management, departmental, customer and associate levels

  • Seven (7) years’ experience as a Fine Dining Chef in a high-volume Casino/Resort, Hotel or major restaurant chain
