Description

Job Purpose or Objective(s): Responsible in developing and monitoring the food and labor budget for the oversight and management of the culinary team, managing menu/costs and driving member/guest satisfaction through creative and new menu items across all food production venues while maintaining the highest professional food quality and sanitation standards.

Primary Tasks:

  1. Oversee the development of menu items, recipes, and culinary guides for property venues.

  2. Assure culinary team is using all quality assurance tools to obtain guest satisfaction when visiting our outlets or on the casino floor.

  3. Implement procedures to minimize wastage and over-production; maximize profits through careful ordering, proper and well-organized storage, use of proven recipes, and creative use of leftover food.

  4. Monitor leadership team for adherence to training, financials, and quality assurance tools.

  5. Coach and guide new members of the team, putting in place proper orientation training and ongoing training and development for team members.

  6. Maintain and enforce high standards of sanitation, cleanliness and safety throughout all kitchen areas at all times.

  7. Monitor staffing for maximum productivity and high standards of quality; control payroll costs to achieve maximum profitability.

  8. Build and leverage networks within and outside the company; encouraging and promoting an open exchange of information

  9. Perform other duties as may be assigned.

Required Education, Skills and Experience:

MINIMUM

  • Bachelor’s degree or related culinary degree

  • ServSafe Certification

  • Ability to handle multiple tasks and deploy available resources effectively

  • Strong verbal and written communication skills to positively communicate and instruct team members

  • Strong leadership skills and excellent client and guest service experience

  • Previous experience with food control and labor cost, demonstration cooking, menu development and pricing and development of culinary team

  • Seven (7) years’ culinary management/leadership experience with a proven history of success in a multi-venue environment

  • Ten (10) years’ culinary management/leadership experience with a proven history of success in a multi-venue environment
